Cherry muffins

This is my favorite muffins recipe =)

100 g butter
2 eggs
0,5 cup of white or brown sugar
0,5 cup of self-rising flour
10 g vanilla essense
18-20 frozen pitted cherries (thawed) or compote cherries

Whip soft butter with sugar until it becomes lighter in color

Beat in the eggs – one at a time

… to get a smooth mixture

Sift in the flour

And mix thoroughly together using a hand mixer or blender (I personally prefer the latter)

Spoon some dough into the bake cups or a muffin baking pan

Add the cherries – 2 or 3 cherries for a cup

Cover the cherries with more dough, but make sure to leave at least 1/4 of the cup unfilled since your muffins will get bigger while baking

Bake at preheated oven at 180C for 25 minutes or until golden brown, check with a toothpick after that – it should be clean and almost dry (except for the traces of melted butter).

Let the muffins cool for about 5 minutes

and gently take them out of the cups (if you use silicone ones) or out of the tray and put on a rack to cool further

In 5 minutes they will be deliciously warm to have some with the milk 😉
